Winemaking: Hand picked the 4th March 2010 and whole bunch pressed to tank for cold settling overnight. Juice was racked to barrel and inoculated with EC1118. The fermentation was complete with in 13 days. 50% malolactic fermentation took place Notes This is the first release of Marsanne from Bird on a Wire and we are very happy with the results. We are aiming to produce a wine which is more inline with Hermitage Blanc than typical Australian marsanne. The vineyard catches plenty of sun and the lean soils help the development of distinctive Marsanne characters. No acid adjustments have been made to this wine. As a result the wine is rich and full with great mouth feel. As with all of our wines, texture is essential to the balance as well as the slight (but balanced) bitterness from marsanne. This is a complex wine with ginger, star anise, fennel and honey characters. It is well matched with rich white meat dishes and Thai coconut based curries.
